Main research lines
Development of research in the areas of Chemistry, Biochemistry, and Molecular Biology on vegetable-derived foods, directing the efforts to the understanding of molecular bases of fruit ripening, and to the relationship “consumption of vegetable-derived foods vs. possible benefits to human health”. The main research topics are:
a) Analysis of the genic expression of fruits submitted to controlled ripening;
b) The effect of fruit ripening in the modification of compound which possibly benefit human health;
c) The anti cancer potential of structural polysaccharides present on fruit.
